Avocado Toast

Avocado toast has been a craze for quite a few months now, but I was always a little skeptical. I wasn't really sure how to top it...and honestly, I much rather would have taken just a side of guacamole (yes, I know it's extra!)

This summer, though, I have been trying to sample a few new, healthy recipes each week. It's a cure to my boredom and is really productive! I was finally tempted into trying avocado toast after my grandparents gave me a huge bag of fresh, ripe avocados. There were so many of them I didn't know what to do with them all! So, I finally decided to give avocado toast a go! 

It was wonderful! I used some savory toppings, and the entire meal was really filling. I think I finally fell into the millennial trap of avocado toast, and now it's a pretty big staple in my diet!

Emily's Avocado Toast 

  • 1 slice of sprouted grain bread (I like Ezekiel 4:9 Sprouted Bread--it's full of grains & is high in fiber) 
  • ripe avocado (I used about 3/4 of the avocado...give or take) 
  • Sliced cucumber 
  • Drizzle of extra virgin olive oil 
  • Drizzle of Sriracha 
  • Sprinkle of crushed red pepper 

Toast the bread to your liking. Spread the avocado on the toast. Top with a drizzle of EVOO, sliced cucumber, Sriracha, and crushed red pepper!

Voila! A super easy, healthy, and delicious meal!
